For the Chicken:

1 pound boneless, skinless chicken thighs

2 tbsp olive oil

2 tbsp lemon juice

2 tsp ground cumin

2 tsp ground coriander

1 teaspoon paprika

1 tsp garlic powder

1/2 tsp turmeric

Salt and pepper to taste

For the Nachos:

tortilla chips

1 cup shredded mozzarella cheese

1 cup chopped tomatoes

1/2 cup chopped cucumber

1/4 cup chopped red onion

1/4 cup chopped fresh parsley or coriander

Tzatziki sauce or garlic sauce, for drizzling

Instruction recipe for Chicken Shawarma Nachos:

  • Mix olive oil, lemon juice, cumin, coriander, paprika, garlic powder, turmeric, salt and pepper in a bowl. Mix well to make the marinade.
  • Add the chicken thighs to the marinade and coat them evenly. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to develop.
  • Preheat grill or grill pan over medium-high heat. Grill the marinated chicken thighs for about 6-8 minutes per side or until they are cooked through and slightly charred. Remove from heat and let them rest for a few minutes. Then cut the chicken into thin pieces.
  • Preheat oven to 350°F (175°C). Place tortilla chips in a single layer on a baking sheet
  • Sprinkle shredded mozzarella cheese evenly over tortilla chips.
  • Spread shredded chicken on top of the cheese layer.
  • Scatter the diced tomatoes, cucumbers, and red onions over the chicken.
  • Bake in the preheated oven for about 8-10 minutes, or until the cheese is melted and the nachos are heated through.
  • Remove from oven and sprinkle chopped fresh parsley or coriander over the top.
  • Drizzle with tzatziki sauce or garlic sauce for extra flavor.
