Green Beans ki Sabji
Ingredients:
250 grams green beans, washed and trimmed
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 small onion, finely chopped
2-3 garlic cloves, minced
1 green chili, finely chopped (optional)
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
1/2 teaspoon coriander powder
Salt to taste
Fresh coriander leaves for garnish
Instructions:
Heat oil in a pan or skillet over medium heat. Add mustard seeds and cumin seeds to the hot oil. Let them splutter. Add finely chopped onions and sauté until they turn golden brown. Add minced garlic and chopped green chili (if using). Sauté for a minute or until the garlic is fragrant. Add the washed and trimmed green beans to the pan. Stir well to coat them with the onion and garlic mixture. Reduce the heat to low, cover the pan, and let the green beans cook for about 5-7 minutes, or until they are tender-crisp. Stir occasionally to ensure even cooking. Once the beans are cooked, add turmeric powder, red chili powder, coriander powder, and salt. Mix well to coat the beans with the spices. Cook for an additional 2-3 minutes, stirring occasionally, to allow the flavors to blend. Remove from heat and garnish with fresh coriander leaves. Your Green Beans ki Sabji is ready to be served!
