Mushroom Masala Curry

Material:
- 1 pound mushrooms, chopped
- 1 onion, chopped
- 2 cloves garlic, finely chopped
- 1 tbsp ginger, finely chopped
- 1 (14.5 ounce) can diced tomatoes
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon salt
- 1/4 cup water
- 1/4 cup coriander, chopped
Instruction:
Heat oil in a large pan or pot on medium flame. Add onion and cook until softened about 5 minutes.
Add the garlic, ginger, and mushrooms and cook until the mushrooms begin to brown about 5 minutes.
Add chopped tomatoes, turmeric powder, garam masala powder, red chili powder, coriander powder, and salt to the pan. Stir to combine.
Bring the curry to a boil, then reduce the heat and simmer for 15 minutes, or until the curry thickens.
Add coriander leaves and serve.
Tips:
For a richer taste, use homemade chicken broth instead of water to make the curry.
If you don’t have fresh coriander, you can use 1 teaspoon dried coriander instead.
Add other vegetables to the curry, such as baked potatoes, carrots, or peas.
