1 can (15 oz) chickpeas, drained and rinsed (or 1.5 cups cooked chickpeas)

1 onion, chopped

2-3 garlic cloves, minced

1 tsp ginger paste

2-3 small green chillies, finely chopped (or 1/2 tsp red chilli powder)

2 tomatoes, chopped

1 tsp cumin seeds

1 tsp coriander powder

1/2 tsp garam masala

1/4 tsp turmeric powder

1/4 tsp paprika

1/4 tsp salt (adjust to taste)

1 tbsp oil

2 tbsp chopped cilantro (optional)

Instructions Chana Masala:

Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds. Add chopped onion, garlic, ginger paste, and green chillies (or red chilli powder) to the pan. Cook for 2-3 minutes until the onions are translucent. Add chopped tomatoes to the pan and cook for 5-7 minutes until they turn soft and mushy. Add coriander powder, garam masala, turmeric powder, paprika, and salt. Mix well and cook for another 1-2 minutes. Add the chickpeas to the pan and mix until they are coated with the masala. Cook for 5-7 minutes until the chickpeas are heated through. If the mixture is too dry, you can add 1/4 cup of water and cook for another 2-3 minutes. Garnish with chopped cilantro (optional) and serve hot with rice, naan, or roti.
