Simple recipe for Tandoori Naan-
Ingredients:
3 cups all-purpose flour
1 teaspoon active dry yeast
1 teaspoon salt
1 teaspoon sugar
1/4 teaspoon baking soda
1/4 cup plain yogurt
1/4 cup milk
1/4 cup water
2 tablespoons vegetable oil
1 egg, lightly beaten
2 tablespoons chopped fresh cilantro (optional)
For the Tandoori Marinade Naan:
1/2 cup plain yogurt
2 teaspoons minced garlic
1 teaspoon grated ginger
1 teaspoon garam masala
1/2 teaspoon turmeric
1/2 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
Instructions Tandoori Naan:
In a large bowl, whisk together the flour, yeast, salt, sugar, and baking soda.In a separate bowl, mix together the yogurt, milk, water, vegetable oil, and egg.Slowly add the wet ingredients to the dry ingredients, stirring with a wooden spoon until a dough forms.Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.Place the dough in a lightly oiled bowl, cover with a damp towel, and let rise in a warm place for about 1 hour, or until doubled in size.While the dough is rising, prepare the tandoori marinade. In a small bowl, mix together the yogurt, garlic, ginger, garam masala, turmeric, paprika, cumin, salt, and cayenne pepper.Preheat your oven to 500°F (260°C). If you have a pizza stone, place it in the oven to heat up.Divide the dough into 6-8 equal pieces. Roll out each piece into a circle about 1/4-inch thick.Brush each circle with the tandoori marinade and sprinkle with chopped cilantro (if using).Transfer the naan to the hot pizza stone (or a baking sheet) and bake for 5-8 minutes, until puffed and golden brown.Remove the naan from the oven and brush with melted butter or ghee.
