Simple recipe for aloo Matar-
Ingredients:
2 medium-sized potatoes, peeled and diced
1 cup green peas, fresh or frozen
1 medium-sized onion, finely chopped
2 medium-sized tomatoes, finely chopped
1 tsp ginger-garlic paste
1 tsp cumin seeds
1 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp red chili powder
Salt, to taste
2 tbsp oil
1 tbsp chopped coriander leaves for garnishing
Instructions aloo Matar:
In a large pan or wok, heat the oil over medium heat. Add the cumin seeds and let them splutter.Add the chopped onions and sauté until they turn translucent.Add the ginger-garlic paste and sauté until the raw smell disappears.Add the chopped tomatoes and sauté until they become soft and mushy.Add coriander powder, turmeric powder, red chili powder, and salt to taste. Mix well and sauté for a few minutes. Add the diced potatoes and green peas. Mix well. Add a little water, if required, to bring the mixture to a thick gravy consistency. Cover and cook on low heat for 10-15 minutes, stirring occasionally, until the potatoes and green peas are cooked through. Garnish with chopped coriander leaves. Serve hot with roti, paratha or rice.
