Material:
For Bhature:
- 2 cups whole wheat flour
- 1/2 tsp salt
- 1 teaspoon sugar
- 1/2 tsp baking powder
- 1/4 cup curd
- water, as required
For Chole:
- 1 cup dried chickpeas, soaked overnight and drained
- 3 tea bags
- 1 teaspoon salt
- 1 tbsp dried pomegranate seeds
- 1 tsp cumin
- 2 tbsp ghee
- 1 tbsp ginger-garlic paste
- 2 green chilies, slit
- 1 medium onion, finely chopped
- 1 medium tomato, finely chopped
- 1 tbsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp red chili powder
- 1/2 tsp dried mango powder
- coriander sprigs for garnish
- onion rings for serving
Instruction:
- To make Bhatura, mix flour, salt, sugar, baking powder and curd in a large bowl. mix well to combine.
- Add water a little at a time and knead till the dough comes together to form a soft dough. Cover the dough with a wet cloth and keep it for 30 minutes.
- To make chole, heat a pressure cooker on medium heat. Add gram, tea bag, salt and pomegranate seeds. Add enough water to cover the chickpeas by 2 inches.
- Close the pressure cooker and cook till 3 whistles. Let the pressure release naturally.
- Remove the tea bags and strain the chickpeas.
- Heat ghee in a large pan on medium heat. Add cumin seeds and cook for a few seconds till the aroma comes out.
- Add ginger-garlic paste and green chilies and cook for a minute.
- Add onions and cook till soft.
- Add tomatoes and cook till soft.
- Add coriander powder, cumin powder, red chili powder and dry mango powder. Cook for one minute.
- Add cooked gram and mix well.
- Garnish with coriander sprigs and onion rings.
- To make Bhatura, heat a non-stick pan on medium heat.
- Divide the dough into equal portions and roll each portion into a circle about 6 inches in diameter.
- Cook the bhatura in a hot pan for 2-3 minutes on each side or till it turns golden brown and puffs up.
- Serve Chole Bhature hot with your favorite chutney.
Tips:
- For puffier bhatura, you can add 1/2 teaspoon of baking soda to the flour.
- You can add a few tablespoons of roasted gram (besan) to the masala to make the chole more delicious.
- You can also add some chopped coriander to the chickpeas.
- Serve Chole Bhature with raita or curd.
This recipe is a healthier version of the traditional Chole Bhature, as it uses whole wheat flour instead of refined flour and less oil. It’s still a delicious and satisfying meal that you can enjoy without the guilt.
