Makhane Ki Sabzi Recipe
Makhane Ki Sabzi Introduction:

Component:
- 2 cups makhana (lotus seeds)
- 2 tbsp ghee (clarified butter)
- 1 tsp cumin
- 1 medium-sized onion, finely chopped
- 2 tomatoes, pureed
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder (as per taste)
- 1 tsp coriander powder
- 1/2 tsp garam masala
- salt to taste
- Fresh coriander leaves for garnishing
Makhane Ki Sabzi Instruction:
Dry roast the lotus seeds:
- Heat a pan on medium heat and dry roast the makhana till it becomes crisp. Keep stirring continuously to avoid burning.
- After roasting, take out the makhana from the pan and let it cool down. Mash them lightly and cut them into small pieces and keep them aside.
Make vegetable curry:
- Heat ghee in the same pan on medium heat. Add cumin and let it crackle.
- Add finely chopped onion to it and fry till it turns golden.
- Add ginger-garlic paste and fry for a minute until the raw smell goes away.
- Add tomato puree and cook for a few minutes till oil separates from the mixture.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix the spices well.
- Cook the spices for a few more minutes until all the spices blend together.
- Put the roasted and crushed makhana in the masala and mix it lightly with your hands to coat the makhana with the spices.
- Lower the flame and let the makhana cook in the spices for 4-5 minutes while stirring in between.
- Sprinkle garam masala over the dish and mix well. Cook for one more minute.
- Switch off the flame and garnish the makhana curry with fresh coriander leaves.
