Component:

  • 2 cups makhana (lotus seeds)
  • 2 tbsp ghee (clarified butter)
  • 1 tsp cumin
  • 1 medium-sized onion, finely chopped
  • 2 tomatoes, pureed
  • 1 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder (as per taste)
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • salt to taste
  • Fresh coriander leaves for garnishing

Makhane Ki Sabzi Instruction:

Dry roast the lotus seeds:
  • Heat a pan on medium heat and dry roast the makhana till it becomes crisp. Keep stirring continuously to avoid burning.
  • After roasting, take out the makhana from the pan and let it cool down. Mash them lightly and cut them into small pieces and keep them aside.
Make vegetable curry:
  • Heat ghee in the same pan on medium heat. Add cumin and let it crackle.
  • Add finely chopped onion to it and fry till it turns golden.
  • Add ginger-garlic paste and fry for a minute until the raw smell goes away.
  • Add tomato puree and cook for a few minutes till oil separates from the mixture.
  • Add turmeric powder, red chili powder, coriander powder, and salt. Mix the spices well.
  • Cook the spices for a few more minutes until all the spices blend together.
  • Put the roasted and crushed makhana in the masala and mix it lightly with your hands to coat the makhana with the spices.
  • Lower the flame and let the makhana cook in the spices for 4-5 minutes while stirring in between.
  • Sprinkle garam masala over the dish and mix well. Cook for one more minute.
  • Switch off the flame and garnish the makhana curry with fresh coriander leaves.
