Cucumber Tomato Onion Salad
Component:
- 1 English cucumber, thinly sliced
- 2 large tomatoes, cut into pieces
- 1 small red onion, thinly sliced
- 2 tbsp fresh lemon juice
- 2 tbsp extra-virgin olive oil
- 1 teaspoon honey or maple syrup
- salt and pepper as per taste
- fresh parsley or mint leaves for garnish
Cucumber Tomato Onion Salad Instruction:
- In a large salad bowl, take a chopped cucumber, chopped tomato, and thinly sliced red onion.
- In a small bowl, whisk together the fresh lime juice, extra-virgin olive oil, honey or maple syrup, salt, and pepper. Adjust sweetness and spice to your liking.
- Pour the dressing over the cucumber, tomato, and onion mixture. Toss gently to make sure all ingredients are evenly coated with the dressing.
- Leave the salad like this for about 10-15 minutes so that the flavors meld and the vegetables absorb the dressing well.
- Toss the salad one last time before serving. Adjust seasoning if necessary.
- If desired, garnish the salad with fresh parsley or mint leaves for added freshness and presentation.
