2 green chillies, finely chopped
1 small onion, finely chopped
1/2 cup mixed vegetables (carrots, peas, bell peppers, etc.), finely chopped
2 tablespoons soy sauce
1 tablespoon chili sauce
1 tablespoon tomato ketchup
1/2 teaspoon vinegar
Salt to taste
Fresh cilantro (coriander leaves) for garnishing
Instructions:
Heat oil in a large pan or wok over medium heat.Add minced garlic and chopped green chillies to the hot oil. Sauté for a minute or until the garlic turns golden and releases a fragrant aroma.Add finely chopped onions to the pan and sauté until they turn translucent.Add the mixed vegetables to the pan and stir-fry for a few minutes until they are cooked but still crisp.In a small bowl, mix together soy sauce, chili sauce, tomato ketchup, vinegar, and a pinch of salt.Push the vegetables to one side of the pan and pour the sauce mixture into the empty space. Allow it to heat for a few seconds.Add the cooked rice to the pan and gently mix it with the sauce and vegetables. Make sure the rice is evenly coated with the sauce.Stir-fry the rice for a few minutes, breaking up any clumps and ensuring that the flavors are well incorporated.Taste the rice and adjust the salt and seasonings according to your preference. You can add more soy sauce or chili sauce if desired.Once the rice is heated through and well combined with the sauce and vegetables, remove the pan from heat.Garnish with fresh cilantro leaves.Your Chilli Garlic Rice is now ready to be served!
