For Dabeli Masala:

- 1 teaspoon sugar
- 1/2 tsp salt
For Potato Filling:
- 3 medium sized potatoes, boiled, peeled and mashed
- 1/3 cup finely chopped onion
- 2 tsp dabeli masala
- 1 pinch asafoetida
- 1/2 teaspoon cumin
- 2 tbsp tamarind chutney
- 2 to 3 tablespoons grated coconut (fresh or dry)
- 2 to 3 tablespoons pomegranate seeds
- 2 to 3 tablespoons chopped coriander leaves
- 2 tbsp oil
- 2 tbsp water (optional)
- salt to taste
For assembly:
- Dabeli Buns
- Red Chutney
- Green Chutney
- Sev (thin, fried gram flour noodles)
Instruction:
To make Dabeli Masala, heat a pan on low flame and fry all the ingredients in it until aroma comes out. – Let the spices cool completely, then put them in a blender and grind them finely.
To make potato filling, heat oil in a pan on medium flame. – Add cumin and asafoetida and fry for a few seconds until the aroma comes out. – Add onion and fry until soft. – Add Dabeli masala and fry for a minute.
Add mashed potatoes, tamarind chutney, coconut, pomegranate seeds, green coriander and salt as per taste. Mix well and cook for a few minutes, until the potatoes are heated through.
To assemble the dabeli, cut the buns in half. Spread some red chutney and green chutney inside the buns (optional). Place one tablespoon of potato filling on half of the bun. Add sev on top and close the sandwich with the other half of the bun.
Repeat steps 4 and 5 to collect the remaining dabelis. serve immediately.
Tips:
For a more authentic taste, use homemade tamarind chutney and green chutney.
If you do not have Dabeli masala, you can make your own masala by mixing coriander seeds, cumin, fennel, black pepper, cinnamon powder, turmeric powder, dry mango powder and salt in a blender and grinding them finely.
To make Dabeli even more delicious, you can fry the buns in a pan on low flame before making the sandwich.
