2 large potatoes, boiled and mashed

1 cup paneer, grated

1/4 cup cornflour

Salt, to taste

1/2 tsp red chili powder

1/2 tsp garam masala

Oil, for deep frying

Ingredients for Gravy:

2 tbsp oil

2 cloves garlic, minced

1-inch piece ginger, grated

1 onion, chopped

2 tomatoes, chopped

1/2 cup cashew nuts, soaked in water for 30 minutes

1 tsp cumin powder

1 tsp coriander powder

1 tsp garam masala

1/2 tsp turmeric powder

Salt, to taste

1/2 cup cream

Coriander leaves, for garnish

Instructions Malai Kofta:

In a large mixing bowl, combine the mashed potatoes, grated paneer, cornflour, salt, red chili powder, and garam masala. Mix well and form into small balls. Heat oil in a deep frying pan and fry the potato and paneer balls until golden brown. Set aside on a paper towel-lined plate to absorb excess oil. To make the gravy, heat oil in a large saucepan over medium heat. Add garlic and ginger and sauté for a few seconds until fragrant. Add chopped onions and sauté until golden brown. Add chopped tomatoes and cook until they soften and become mushy. Add the soaked cashew nuts, cumin powder, coriander powder, garam masala, turmeric powder, and salt. Cook for a few minutes. Remove from heat and let the mixture cool down a bit. Blend the mixture to a smooth paste. Return the paste to the saucepan and add cream. Mix well and cook for a few minutes. Add the fried kofta balls to the gravy and cook for 2-3 minutes. Garnish with coriander leaves and serve hot with rice or naan. Enjoy!
