Ingredients:
1 cup basmati rice
2 tablespoons oil or ghee
1 teaspoon cumin seeds
1 small onion, finely chopped
1 green chili, finely chopped (adjust to taste)
1/4 cup peanuts
1/4 cup cashews
1/4 cup raisins
1/4 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
Salt to taste
Fresh coriander leaves, chopped (for garnish)
Lemon wedges (optional, for serving)
Instructions:
Wash the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside. Heat oil or ghee in a large pan or skillet over medium heat. Add the cumin seeds and let them splutter. Add the chopped onions and green chili. Sauté until the onions turn golden brown. Add the peanuts, cashews, and raisins to the pan. Stir and cook until the nuts turn golden brown and the raisins plump up. Add the turmeric powder, red chili powder, and salt to the pan. Mix well. Add the drained basmati rice to the pan and gently stir to coat the rice with the spices and ingredients. Add 2 cups of water to the pan and bring it to a boil. Once it boils, reduce the heat to low and cover the pan with a tight-fitting lid. Allow the rice to simmer on low heat for about 15-20 minutes or until all the water is absorbed and the rice is cooked and fluffy. Once the rice is cooked, turn off the heat and let it sit, covered, for an additional 5 minutes. Fluff the rice gently with a fork and transfer it to a serving dish. Garnish with freshly chopped coriander leaves. Serve Namkeen Rice hot with lemon wedges on the side for an extra tangy flavor.
