Palak paneer ki sabji-
Ingredients:
2 cups spinach leaves, washed and chopped
200 grams paneer (cottage cheese), cubed
2 medium-sized onions, finely chopped
2 medium-sized tomatoes, finely chopped
2 green chilies, slit
4-5 garlic cloves, minced
1-inch piece of ginger, grated
1 teaspoon cumin seeds
1 teaspoon garam masala
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
1/2 cup heavy cream (optional)
2 tablespoons oil or ghee (clarified butter)
Salt to taste
Instructions recipe for palak paneer ki sabji:
Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until they turn golden brown. Add minced garlic and grated ginger. Sauté for a minute until the raw smell goes away. Add chopped tomatoes and green chilies. Cook until the tomatoes become soft and mushy. Now, add the chopped spinach leaves. Stir well and cook for 3-4 minutes until the spinach wilts down. Allow the mixture to cool slightly, then transfer it to a blender or food processor. Blend it into a smooth puree. You can add a little water if needed. Return the pureed spinach mixture to the pan. Add garam masala, turmeric powder, red chili powder, and salt. Mix well and cook for 2-3 minutes. Gently add the cubed paneer to the spinach mixture. Stir carefully to avoid breaking the paneer. Cook for another 5 minutes, allowing the paneer to absorb the flavors. If desired, add heavy cream to the pan and mix well. Simmer for an additional 2 minutes. Taste and adjust the seasoning if needed. Remove from heat and serve hot with naan, roti, or rice.
