Ingredients:

125g oil
1/3 cup sugar
1/2 cup water

1/2 tsp baking soda

2 tbsp curd/yogurt

1 cup water
1 cup sugar
For the Frosting:
1 cup whipping cream (dairy or non-dairy)
2 tbsp vanilla pudding powder
4 tbsp icing sugar (if using dairy cream)
For the Filling:
Glazed or tinned cherries
For the Chocolate Collar:
50g white chocolate
A few drops of gel color
Instructions:
- Preheat the oven to 180°C and prepare two 6″ cake tins by greasing, dusting, and lining them.
- In a bowl, mix together white chocolate, water, oil, sugar, and vanilla. Heat the mixture until the chocolate melts and let it cool.
- In a separate bowl, whisk together all-purpose flour, baking soda, and baking powder.
- Add the warm chocolate mixture to the dry ingredients and whisk until you have a smooth, lump-free batter.
- Add curd and whisk again to combine.
- Divide the batter equally between the two cake tins, smooth the tops, and tap them on the counter to remove any air bubbles.
- Bake the cakes for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Remove the cakes from the oven and let them cool on a wire rack. Once cooled, wrap them in cling wrap and refrigerate until use.
